The Cavatelli Molisani are characteristic of the Molise region. Cavatelli are pulled pasta shapes popular in southern Italy. These shapes are made by dragging the pasta dough on a wooden board. Cavatelli mean "little hollows" and is often made with garlic and broccoli rabe.
